Roze Koeken (Dutch Pink Cakes)

These cupcake like “Roze Koeken” are Dutch style pastries with a top layer made of pink sugar.

Ingredients

  • 1/2 Cup Butter room temperature
  • 1/2 Cup Sugar 100 gram
  • 2 Eggs room temperature
  • 1 Tsp Vanilla extract
  • 1 Pinch Salt
  • 2 Tbsp Cornstarch
  • 1/4 Tsp Baking powder
  • 2 Tsp Lemon zest
  • 1 Cup Flour
  • 1 Tbsp Lemon juice
  • 1 1/2 Cups Powdered sugar
  • 1/2 Cup Frozen red fruit (raspberries)

Instructions

  1. Turn the oven on to 350F (180C). Grease and dust some flour over the cupcake pan. Set aside.

  2. Cream the butter and the sugar with a mixer until light yellow.

  3. Add all the rest of the ingredients except for the powdered sugar, red fruit and lemon juice.

  4. Beat for 3-4 minutes. Divide the batter in the cupcake mold. Make them only half full.

  5. Put the cakes in the oven for about 10 minutes with a cookie sheet on top. This way they won’t go high like cupcakes. Bake for another 10-12 minutes without the cookie sheet.

  6. Let cakes cool completely. In the meantime slowly boil the red fruit in a small pot just enough when liquid starts to come out.

  7. Mix the powdered sugar, lemon juice and coloring juice. Dip the top of the cakes in the sugary mix and let it harden on a rack.
