Puff Pastry (Bladerdeeg)

We cannot go back now! This is even better than store bought puff pastry and not hard to make. Be sure to make some time for it, though!

Ingredients

  • 2 cup flour plus 1 tbsp
  • 2/3 cup water
  • 4 tbsp butter room temperature
  • 1 tsp salt
  • 14 tbsp cold butter

Instructions

  1. Mix all the ingredients together in a bowl (except the cold butter). Knead it in a stand up mixer or with your hands until it is a nice looking ball of dough.

  2. Cut the cold butter stick in half, so it'll be easier to roll into the dough later. Wrap in parchment paper. Put back in the fridge.

  3. Wrap the dough in plastic and leave in the fridge for 30 minutes

  4. Dust the surface with some flour and roll out the dough. Make it into a square and leave the center somewhat thicker. Put the cold butter in the center and fold the corners, so you cannot see the butter anymore. Roll out the dough so it'll be 3x longer as it is wide. It'll be a little hard in the beginning, because the butter is hard, but it should roll out easier.

  5. Fold dough in three parts, see picture above. Turn the dough 1/4 and roll out again. Fold dough in three parts again. Put back in the fridge for 30 minutes.

  6. Repeat this 2 more times. And you are ready to use it for so many yummy things!
