This is THE waffle recipe I remember from my childhood. My mom made these cute little heart shapes waffles for birthday parties or just for the Saturday afternoon. I just use my American bought waffle iron.
Beat the butter, sugar and vanilla for about 3 minutes in the kitchen aid machine
Separate the eggs and beat the egg yolks with the butter-sugar mixture.
Then add the milk and beat until it is nicely combined
Add the sifted flour to the batter.
Beat the egg whites with a little salt into peaks. This can be a tricky thing to do. I usually take a metal bowl and rub it with some lemon juice.
Slowly fold the egg white under the batter with a rubber spatula.
Let the waffle iron get really hot and grease it with a little oil.
Use a ladle to drop batter onto your iron. Cook between 3-5 minutes. This depends on the waffle iron.
