Vrolijk Paasfeest or Happy Easter! I hope you are all doing well! This will be our 2nd Easter celebration in the Covid pandemic. We usually invite people over to celebrate Easter with us and have a wonderful Easter Brunch. But again, this year we will be celebrating Easter with our family of 5. Not only are we going to have a fun Egg hunt, but we are also going to have a yummy Easter Brunch with way too much food!

We love cooking for a big group of people and this year, we just pretend a group of people is coming over, so our table will be decorated as well. Just to keep the tradition going and it is way too much fun to make Easter decorations. We are going to try some of these 10+ Easter brunch recipes and maybe you want to give these a try too.

What can you make the day before?

1. Quiche

Quiche is one of our favorite recipes and a lot of times, I make it on a Saturday, so we have it on Sunday for our “normal” family brunch too. Of course it is extra festive when you use grated sweet potato and normal potatoes to make the crust. Eggs in a nest…get it? It looks beautiful too. I used the recipe from Nadiya bakes and added asparagus (fry these in some oil and salt, before adding them to the quiche.) We also added fresh spinach. I had to bake the quiche a little longer, because the asparagus bring more moisture to the quiche.

2. Boil eggs for “Gevulde Eieren” or Devil’s Eggs

Kids love to decorate Easter Eggs. When they are busy with that, I usually add some more eggs to the boiling water. On Sunday it’ll be easy to make “Gevulde Eieren” or Devil’s Eggs and I can focus on the filling of the Devil’s eggs.

Here is a Dutch way of making these:

For 8 egg halves:

4 boiled eggs, 1 tbsp mayonaise, 1 tbsp plain yogurt,1 tsp mosterd, a pinch of paprika powder, a pinch of curry powder, a pinch of salt, cut up chives.

Cut the eggs carefully in half. Put all the egg yolks in a bowl and mix in the other ingredients except for the chives. Use a piping bag or zip lock bag to pipe the mixture into the egg halves. Sprinkle the chives on top.

3. Easter Bread

When my brother and I were little, our mom made white bread dough from scratch on a Saturday. After we played outside for the whole day, we made our little rolls out of the dough. Sometimes my brother worked the dough for too long, his rolls came out the oven, hard as a rock!

I was always into braiding and made little heart shape rolls with raisins in them. After we made our rolls and my mom out them in the oven, we took a shower or bath and we were allowed to eat our rolls in the living room where we could watch “The A-team” or “Knight Rider”.

Now I have a bread machine, which makes dough in 1,5 hours. It is possible to make the little rolls the night before and warm them up in the morning. You could put the dough in the machine in the morning, then you have time to make other things for your Easter Brunch.

4. Hot Cross Buns

I never knew what Hot Cross Buns where when I was little. I knew the “Kaiser Broetchen” from Germany, which have crosses on them, but not like these Hot Cross Buns. Our youngest loves cooking and baking with me and we got hooked on the Netflix series: Nadiya Bakes. When she bakes, it looks so simple, so M and I try to bake a new recipe from Nadiya every weekend. These Berry Hot Cross Buns are definitely on the list for Easter, especially, because they have berries in them.

Normally we eat croissants, but now it is time for something different. We’re so excited!

5. Carrot cake

If this cake is a bit too much for your Easter Brunch (which I don’t think it is!), eat it when you have a coffee/tea break in the afternoon. Maybe you went for a bike ride or nice Easter walk. It is always time for cake!

6. Cinnamon buns

Another sweet addition to your Easter Brunch are these cinnamon buns. When I make them, I make the dough (in the bread machine again) the day before and leave the buns overnight in the refrigerator and bake them in the morning.

We never made them at home in the Netherlands, but I love to make them once in a while here in the US. My first time eating cinnamon buns was at a Dunkin Donuts. Not realizing they were sooooo sweet. When I make them now with an American recipe, I always cut the sugar in half. Here is a great recipe from Ambitious Kitchen.

What else can you make?

Don’t forget to decorate your table. You can do that also the day before. Here are some ideas to try out. This year I’m going to make the cute little egg shell candles.

  • Make tea and or coffee. We also love chai.
  • Make fresh orange juice or smoothies for the kids.
  • Cheese (and meat) platter. We have mainly vegetarians in our family, but my youngest and I like some chicken deli slices. Don’t forget cream cheese.
  • All kinds of jams, jellies and chocolate spread. Ever tried cookie butter?
  • Fresh fruit salad. Strawberries, blueberries, apple, grapes, mango…use all of your favorite. Mix sour cream with brown sugar or maple syrup to top it off.
  • Dessert in a glass: Soak lady fingers (“lange vingers”) in strong coffee. Mix mascarpone and cream cheese, vanilla and sugar. Use “Advocaat” or make vanilla custard. Make layers with the lady fingers, the mascarpone mixture and the “Advocaat” or vanilla custard in a glass. Sprinkle grated chocolate or use (Dutch) chocolate sprinkles on top.
  • My husband is a master omelet maker. I love the one with spinach, asparagus, brie and cashew nuts inside. Yummmm! The trick is to cook the eggs longer on low heat.
  • Eggs Benedict. I always order Eggs Benedict at a restaurant when we go out for breakfast or brunch, because I always thought this is one of those things I could never make at home. It turns out, it is actually not that hard! The tricky thing could be the Sauce Hollandaise. But I found a way how to make it with a blender. I always add a little bit of mustard.
