I cannot remember that baked goods were one of our after school snacks when I grew up. In fact, my mom just recently confessed, that she doesn’t like baking! Wait what??? She asked me to send her this recipe for Banana Bread, because who doesn’t have a lot of overripe banana’s at home? Now she’s making banana bread and apple pie for my nephews, her grand sons as much as she can.
All these years of baking fruit pies, birthday cakes, our white bread creations on Saturday evening….she did it all for us? Now I can see how great it is to bake with and for kids.

Why is this recipe so awesome?
This Banana Bread was so popular at my Craft Cafe, that I had people coming on Saturday mornings, asking if I baked THE Banana Bread again. Sometimes I did have it, sometimes I had “Lemon Scones”, or “Apple Bars”.
And actually, I don’t know exactly why it was, and still is, so popular. Maybe it is the crunchy crust, or the cinnamon-sugar mix in the middle. Try it out…and tell me;) Just for your information: I cut the sugar amount in half. This might be a personal thing, but the American recipes (for cookies, cakes, and other baked goods) have way to much sugar in them. It’s up to you!
I’m saying this because one of the comments on Pinterest was that the Banana Bread didn’t have enough sugar, aka wasn’t sweet enough. Which makes this bread into a healthier option for an after school snack.

A healthy snack for kids
It is very easy to whip this banana bread up the day before you need it….like…every day! It has become somewhat the tradition at school. Little Munchkin has a snack calendar and once a month it is our turn to bring something for her friends at school. The rule at our preschool is that the snacks should be organic, which all the ingredients I used are.
Teachers look at me funny (and hopefully grateful too), when I come to school with Little Munchkin on one hand and a bag with the Banana Bread in the other. I was explaining to them that I don’t always have store bought snacks at home and it is easier for me to make this bread in the evening, than jump in the car, drive to the store and buy snacks.
So below you’ll find the recipe for a big bundt cake version of banana bread. You can cut the recipe in half for a smaller cake mold.
So here we go!
Banana Bread
The best recipe out there for Banana Bread. A healthy afternoon snack or toasted in the morning with some butter!
Ingredients
- 5 ripe bananas
- 2 eggs
- 2/3 cup butter
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 cup sugar
- 1 tsp vanilla extract
- 3 cups unbleached flour
Instructions

Preheat the oven to 350 F. Melt the butter in a sauce pan. Grease a bundt cake pan. Mash the bananas with a pastry cutter in a big bowl.

Add the eggs, vanilla, butter and sugar and mix well. Sprinkle the baking soda and salt over the mixture. Carefully mix in the flour. Do not over mix.

Put half of the batter in the bundt cake pan. Then sprinkle cinnamon and sugar over the layer of batter. Put the other half of the batter on top and top this layer of with some cinnamon and sugar again. Put the banana bread in the oven for about 1 hour.
