These are definitely the best Non-Bake Energy Bars everrrr!
They are a great road trip snack as well. My husband has to tell me several times: “Get that stuff away from me!!!” And at my Craft Cafe, they were a big hit: Homemade Energy Bars, gluten, dairy and sugar free!
The great thing is, that you can put anything in there you and your family like the best. They are gluten and dairy and besides the honey or maple syrup, AND sugar free as well. Not so much sugar needed on road trips, right!
These easy energy bars can be made within 15 minutes and chilled overnight.

Best Non-Bake Energy Bars
According to my husband, these are the best "on the road snack". When they’re chilling in the fridge, he keeps nibbling from them!
Look for a sugar free nut butter if possible. Links are provided in the notes.

- 1 1/2 cup nuts any kind, almonds, cashews, pistachios
- 1 cup dried fruit any kind, cranberries, cherries, blueberries, apricots
- 1 tsp chia seeds
- 5 dates
- 1 tsp cinnamon
- 1/2 cup honey or maple syrup
- 3/4 cup nut butter any kind, almond, peanut or cashew butter
- 1 cup chocolate chips optioinal
- 1 tbsp cocoa powder
Instructions
Put the nuts and dried fruits in a food processor, like the Vitamix.
Mix all the ingredients in a bowl, till everything is blended.
Take a spoon and put the "batter" in an oven dish with parchment paper or wax paper.
Chill in the fridge overnight.
Recipe Notes
The sneaky fact is that sugars are in all kinds of nut butters. Some grocery stores have a place where you can make your own nut butter. Here you can get a great sugar free Almond Butter, a Peanut Butter or a Cashew Butter.
