How do you make a Dutch Rice Pie (Rijstevlaai) when you live abroad?

To be more exact: “Limburgse Rijstevlaai” IfI could choose between the different pies at a Dutch birthday party, I would usually choose the “Rijstevlaai”….with whipped cream and shaved chocolate pieces on top! Scroll down for the recipe!

Rice in a pie?

You might be wondering why anyone would put rice in a pie. After all, pies are usually bursting with fruits and berries, right? Well, the “Limburgse Rijstevlaai” flips the script by featuring dessert rice or sweet rice as its star ingredient. If you can’t find sweet rice, don’t worry; ordinary white rice will do the trick.

Of course I like my apple , “ski vlaai” and cherry pie, but this “Rijstevlaai” is something special. Something I’m really looking forward to while visiting my parents in the Netherlands.

A few times a year we buy “Rijstevlaai” in the Netherlands for especially birthdays or other holidays and events, like Kermis (the fair). Usually on Sunday people have coffee with a piece of “vlaai”. Even my kids sometimes ask: ” When is it “koffietijd”? They know there will be a cookie or a piece of pie with our coffee.

A little history about “vlaai”.

“Vlade” comes from the Germanic times when they flattened dough on a hot stone and drizzled this “pie” with honey and fruit juice. There are different “vlaai” recipes, below you’ll find the recipe for the “Limburgse Rijstevlaai”. I hope very, very soon, I will make another favorite: “Kruimelvlaai met pudding” (Crumble Pudding Pie).

“Limburgse Rijstevlaai” Recipe

Ingredients.

  • For the crust:
    • 200 grams of all-purpose flour
    • 1 packet of instant yeast
    • 70 ml of whole milk
    • 3 tsp of sugar
    • 30 grams of butter (melted)
    • 1 egg
    • A pinch of salt
  • For the rice filling:
    • 115 grams of sweet or dessert rice
    • 700 ml of whole milk
    • 2 tsp vanilla extract
    • 100 grams of sugar
    • 2 eggs (beaten)
  • For the topping:
    • 400 ml whip cream
    • 3 tbsp sugar
    • Shaved/grated pieces of chocolate

How to make it:

  1. Start with the crust. Mix the flour, yeast, sugar and salt in a bowl. Add the butter, egg and milk. Knead the dough for a few minutes. Cover the bowl with a towel and let it double for a little more than one hour. Grease a 9-inch pie pan and set aside.
  2. You can make the filling now (or wait for 15-30 minutes). Put the milk with the vanilla in a sauce pan. Let it come to a boil. Add the sugar and rice. Keep stirring until it boils again. Turn the heat low and stir occasionally. Don’t let it burn. Wait until it thickens and the rice is cooked. Take the pot off the burner and stir in the beaten eggs.
  3. Check on the dough in the meantime. Punch it down and knead until it becomes a soft ball. Roll out the dough until it is a little bigger than your pie pan. Cut off the excess. Poke holes in the crust with a fork.
  4. Fill the crust with the rice filling and cook in the oven for 25-30 minutes on 375F. Let the pie cool.
  5. In the meantime you can make the topping. Whip the cream with sugar and pipe it on the rice-pie. Sprinkle with chocolate.
