Last Monday I started a cleanse…a gut cleansing diet for 2 weeks, maybe 3…maybe I cannot keep it up for that long at all. No gluten, no dairy and no sugar. No gluten and sugar, okay, but NO DAIRY! I’m Dutch, I need my CHEESE! …..Breathe in……. breathe out! I can do this! Can I still eat some of our family favorites, like our oven baked Sauerkraut dish, or lasagna or this Best Black Bean Burger Recipe???
Ayurvedic Gut Cleanse
It sounds kind of disgusting, and I hope this doesn’t effect your appetite for these amazing Black Bean Burgers, but it is spring and if you’re thinking of spring cleaning for your house, why not do a spring cleaning for your body?
Ever tried a diet?
Yes, me too…and why couldn’t I stick with it? After a month the pounds came right back!
Maybe because that diet wasn’t for me. To do a cleanse means, you reset your gut system, clean out the stuff that is left behind from bad food you eat. Some people can handle food better than others. Each person has a different body type. To find out yours, click here!
After you have found out what your body type is, it’s good to know which kinds of food are beneficial for you and which are hard for your body type to digest. If you’d like to learn more, here is an online course how to heal your gut and reset it.
I had to plan the week with my husband and we talked about what kinds of food we can eat, which foods have hidden sugars and which snacks we can have in case we’re getting hungry in between. We used the Rest and Repair Diet. I was also drinking fresh home made chicken broth (recipe coming soon) every day. And here are more breakfast, lunch and dinner ideas we came up with.
Breakfast:
Apple/Pear compote with cinnamon, cardamom and raisins
Scrambled or hard boiled eggs with steamed vegetables.
Gluten free toast with coconut spread
Yogurt with fresh fruit and nuts (Yogurt is allowed, even though being a dairy product) Think of Lassi drinks
Lunch:
Quinoa with olive oil, nuts, spinach and a hard boiled egg
Gluten free wrap with avocado and chicken, rice and refried beans
GF pasta salad with chicken and vegetables
Gluten free pasta salad.
Dinner:
Baked potatoes with olive oil, salt, Italian seasoning, asparagus

Black Bean Burgers
These burgers are the bomb. We eat them at least twice a month. In the summer we pre-bake them and put them on the grill outside to add some smokey flavor. Find some awesome Summer BBQ recipes, griddle recipes and drinks right here.
For this cleanse I made gluten free hamburger buns.
And here is the Best Black Bean Burger ever:
Best Black Bean Burger
This Burger is not only gluten but also dairy free. You can ad any kind of dairy free sauce to make it your own burger!

Ingredients
For the buns
- 1 package Active dry yeast
- 1 1/4 cup warm water
- 6 tbsp olive oil
- 1/4 cup coconut sugar
- 3 cups gluten free all-purpose flour brown rice flour, potato starch, tapioca starch, xantham gum
- 1 tsp salt
- 2 eggs
- optional: oil and sesame seeds for the top of the buns
For the burger patties
- 1 can black beans
- 1 carrot, grated
- 1/2 zucchini or celery stick, grated
- 1 tbsp olive oil
- 1 cup quinoa, cooked 1/2 cup dried quinoa makes 1 cup cooked quinoa
- 1/2 cube vegetable bouillon
- 3 tbsp ketchup
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp garlic, minced or garlic powder
- 1 tsp cinnamon
- 1-2 cup Gluten free bread crumbs
Instructions
To make the buns

Preheat the oven to 425 degrees F. Pour the water with the yeast in a bowl, stir. Add the sugar and the oil. Stir again. Put a towel over the bowl and wait about 10-15 minutes till it starts to get foamy and thick.

Use a mixer to combine the flour with the salt and the yeast mixture. Add the eggs one by one. Mix for about 3 minutes until combined. The dough looks a little like thick ice cream. Not much like bread dough. I scooped (with an ice cream scoop) little balls on a cookie sheet (greased) or a Silpat (silicone). Spray the top of the buns with olive oil and bake for 12 minutes.
To make the black bean patties

Boil the quinoa in 2 cups of water with the vegetable bouillon until the water is absorbed.

Saute the shredded vegetables in the oil over medium heat.

Mash the black beans in a bowl, add the quinoa and vegetables, mix.

Mix the ketchup, cumin, salt, garlic and cinnamon together in a small bowl and add to the bean mix.

Add the gluten free bread crumbs to the mix. Start with 1 cup, add more as needed.

Mix everything well until you can make patties.

Fry the patties fro about 3 minutes on each side.

Serve on the gluten free bun with gluten and dairy free sauce of choice, lettuce, dairy free cheese, tomatoes, pickles etc.
